450g beef topside or silverside, finely sliced
2 tsp ground black pepper
1 tsp garlic powder
1 tbsp honey
1 tsp onion powder
1tbsp smoked paprika
185ml soy sauce
185ml Worcestershire sauce
1. Whisk all ingredients, except the beef, together. . 2. Add the beef to the bowl and coat well with the marinade. 3. Cover the bowl with cling film and marinate in the fridge overnight. 4. Preheat oven to 175 degrees F (80 degrees C). 5. Line a baking tray with foil and place a wire rack over the foil. 6. Remove beef from marinade and dry on paper towels. 7. Arrange the beef slices in a single layer on the prepared wire rack on the baking tray. 8. Bake the beef in the preheated oven until dry and leathery, 3 to 4 hours. 9. Cut with scissors into bite-size slices.
