Avocado and mozzarella salad

A beautiful salad that will look after your blood, heart, cells and more. It is also packed with phytochemicals to protect your sight and fight against cancer.
240g/2 avocados, peeled, stoned and cubed
Black pepper to taste
225g cherry tomatoes
Small bunch of chives
100g lettuce torn or separated as appropriate
15ml/1 tbsp lime juice
250g mozzarella cheese, drained and sliced
5g/1 tsp mustard
60ml/4 tbsp olive oil
6g/1 tbsp parsley
Salt to taste
15ml/1 tbsp white wine vinegar
1) Toss the tomatoes, lettuce, avocado and watercress together and divide over 4 plates.
2) Arrange the mozzarella on top of the salad.
3) To make the dressing, whisk together the oil, mustard, vinegar, lime juice and seasoning.
4) Pour over the salad immediately before serving.
5) Decorate with chives.
