An 40g portion of chicory is packed with the phytochemicals lutein and zeaxanthin
  • Lutein and zeaxanthin are found in the retina and lens of the eye
  • Lutein and zeaxanthin are carotenoid phytochemicals that absorb light; in particular they absorb blue light which may protect our eyes from damage and macular degeneration
  • Lutein and zeaxanthin are best absorbed with fat in the same meal
  • Lutein and zeaxanthin have been observed to prevent or slow the development of cataracts in people with a diet rich in these carotenoids 
Chicory also contains a good amount of quercetin which has been shown to block the growth of cancer cells and suppress the development of tumours
