Juice of ½ lemon nutritional information
Juice of ½ lemon
500ml cold pressed rapeseed oil nutritional information
500ml cold pressed rapeseed oil
Salt and pepper to taste nutritional information

2 tbsp white wine vinegar nutritional information
2 tbsp white wine vinegar
1 heaped teaspoon Dijon mustard nutritional information
1 heaped teaspoon Dijon mustard

Method

Simply follow our simply laid out recipe:

1) Whisk the egg yolks in a bowl, then add the mustard and whisk together. 
2) Gradually add about half the oil, very slowly at first, whisking continuously for around 3 to 5 minutes, or until thickened. 
3) Once you’ve added about half the oil, whisk in 1 tablespoon of vinegar to loosen the mixture.
4) Continue to gradually add the remaining oil, whisking all the time. 
5) Season with a pinch of salt, the juice of half a lemon and the rest of the vinegar.
6) This will store for up to a week in the fridge.
