Method

Simply follow our simply laid out recipe:

1) Put apricots, lemon juice, and 150ml water in a saucepan and cook gently for 10-15 minutes, until tender. 
2) Purée in a food processor or push through a sieve. 
3) Gently heat butter in a frying pan. Peel bananas and cut in half lengthways. 
4) Add to the pan and brown on both sides. Pour over rum or brandy. Ignite, then let flames die down. 
5) Add apricot purée, stirring well to combine. 
6) Serve bananas with sauce poured over and vanilla ice cream.
