10g/1 blade chives, chopped
600g/8 flying fish fillets
10g/1 green chilli chopped
50g/1 egg beaten
40g/2 limes, wedged
250ml rapeseed oil for frying
Salt and pepper to taste
1) Mix the herbs and spices together with the lime juice and spread over the fish.
2) Leave to marinate for about 1 hour.
3) Dip the fish into the beaten egg and then into the breadcrumbs.
4) Heat the oil over a medium high heat in a pan and fry gently for a couple of minutes on each side.
5) Serve with wedges of lime.
