10 garlic cloves (approx 50g) peeled and grated nutritional information

450g raw peeled prawns nutritional information

100ml extra virgin olive oil nutritional information

1 tsp red chilli flakes nutritional information
1 tsp red chilli flakes
1 tsp sweet paprika nutritional information
1 tsp sweet paprika
2 tbsp lemon juice nutritional information

60ml brandy nutritional information

small bunch fresh parsley, very finely chopped  (optional) nutritional information

Method

Simply follow our simply laid out recipe:

1) In a large frying pan, warm the olive oil over a medium heat.
2) Add the garlic and red pepper flakes, lower the heat, and sauté for about 1 minute or until the garlic just begins to brown.
3) Raise the heat to high and immediately add the prawns and lemon juice, along with the brandy and paprika. Stir well to coat the prawns and sauté until the prawns turn pink and start to curl, approx 5 minutes.
4) Remove from the heat and season to taste with salt and freshly ground black pepper.
5) Transfer the prawns to a warm bowl.
6) Using a hand held blender, blitz the sauce, before poring over the prawns.
7) Sprinkle with the chopped parsley and serve with slices of French baguette to mop up the sauce.

If you are using cooked prawns add them at the same time. But just warm through. 

To serve as part of a tapas selection for 4, half the portion size
