1 frozen baked potato
½ tin of pink salmon w/ bones
Drizzle of extra virgin oilve oil
Drizzle lemon juice
1 tbsp mayonnaise
Large knob of butter
Pinch of salt and pepper
Handful of rocket
1) Pop the baked potato in the microwave and cook according to instructions 2) Meanwhile put the tinned salmon into a bowl and crush any bones. They are very soft so this should be easy. 3) Add the mayonnaise and salt and pepper to taste. 4) Once cooked, remove the potato from the microwave, cut open and add butter. 5) Put the salmon mixture on top. 6) Toss the rocket with the olive oil and lemon juice. 7) Season to taste and serve alongside the potato.
