4 spring onions, chopped nutritional information

1 Tbsp olive oil nutritional information

30g unsalted butter nutritional information

50g pancetta cubed nutritional information

Handful fresh parsley, finely chopped nutritional information

Method

Simply follow our simply laid out recipe:

1) Season the Sea Trout with salt, black pepper and lemon juice.
2) Heat the oil and butter in a frying pan and add the pancetta, fry for 2 to 3 minutes.
3) Lower to medium heat and add the fish fillets and fry for 1 to 3 minutes per side.
4) Add the spring onions and the wine and bring to the boil and cook for 1 minute.
5) Serve with the chopped parsley on top, alongside new potatoes and asparagus for a truly seasonal dish.
