Method

Simply follow our simply laid out recipe:

1) Fry onions and garlic for a couple of minutes over a low heat until softened.
2) Add the curry powder and cook for half a minute or so.
3) Add the tinned tomatoes and seasoning, and bring to a simmer.
4) Whizz with a blender or mash with a potato masher.
5) Add a little water to loosen the sauce a bit.
6) Cook for 20 minutes to allow the flavours to infuse.
7) Check seasoning and serve.

  • If you're adding meat, brown it off with the onions and garlic and adjust the cooking time until your meat is cooked.
  • If you're adding fish add it at the end and cook until done.
  • If you're adding vegetables add with the tomatoes.
  • If you're adding tinned beans, chick peas etc. add at the end and heat through.
  • If you're adding boiled eggs, allow 2 per person and cutting 1 of those in half. Add 5 minutes before the end of cooking.
To give the curry a South Indian flavour add grated creamed coconut.
Try adding a big knob of butter to turn it into a rich buttery sauce.
Add peanut butter and coconut cream for a Malaysian flavour.
