Save the fat from your roast duck to use for making delicious crispy potatoes. You could also try serving cold sliced in a salad. If your duck is a different size roast for 20 minutes per 500g plus 20 minutes extra.

Method

Simply follow our simply laid out recipe:

1) Remove the duck from the refrigerator at least 30 minutes before cooking.
2) Preheat your oven to 220oc, Fan 200oc, Gas Mark 7.
3) Pat the skin of the duck with a kitchen towel to remove excess moisture.
4) Prick the skin around the duck legs and season with salt and pepper.
5) Place on a rack in a roasting tin and roast in the middle of the oven for 1hour 40 minutes hours, basting with the oil a few times as it cooks.
6) When the duck is cooked cover with foil and rest for 10-20 minutes. It is very important to rest your duck before serving; this equilibrates the temperature and spreads the moisture around.
7) Serve with traditional roast accompaniments, such as roast potatoes, carrots and broccoli.
