Method

Simply follow our simply laid out recipe:

1) Cook the potatoes in boiling salted water for 15 minutes or until tender. Drain.
2) Put the vinegar, oil, mint and mustard in a screw-topped jar and shake well.
3) Pour over potato salad, add spring onion, toss and serve.
