Method

Simply follow our simply laid out recipe:

1) Preheat oven to 200°C, Gas 6.
2) Put butter in saucepan with water and bring to the boil.
3) Remove from the heat and immediately add all of the flour.
4) Beat thoroughly with wooden spoon until smooth.
5) Gradually beat in eggs.
6) Cover 3 baking trays with baking parchment.
7) With a medium nozzle, pipe walnut-sized balls on to trays.
8) Bake for 25-30 minutes until crisp.
9) Make a slit in side of each profiterole to release steam. Leave to cool on a wire rack.
10) To make the sauce, put sugar, chocolate and water in a saucepan.
11) Heat gently, stirring occasionally, until dissolved.
12) Bring to the boil and simmer for 10-15 minutes, stirring occasionally, until a thick pouring consistency.
13) Stir in butter, remove from heat, and leave to cool.
14) Whip cream until stiff and fill profiteroles.
15) Arrange on a serving dish, pour over a little sauce and serve remaining sauce separately.
