Method

Simply follow our simply laid out recipe:

1) Pre heat the oven to 180C/160C fan/gas 4.
2) Place 16 fairy cake cases on a baking tray.
3) Add the carrots to a large bowl.
4) Sift the flour and bicarb on top of the carrot, then add the orange zest and mix everything together.
5) Add the eggs, maple syrup, the orange juice and the oil to the bowl and mix everything together well.
6) Spoon a heaped dessert spoon of mixture carefully into each case.
7) Bake in the oven for 15 minutes or until the cakes are cooked. Test by inserting a knife into one cake. If it comes out clean they are cooked.
8) Transfer to a wire rack to cool.
9) To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth.
10) When the cakes are cool spoon a little icing on the top of each cake.
