Method

Simply follow our simply laid out recipe:

1) Roast the whole spices in a frying pan for a couple of minutes, leave to cool. Grind until fine and add the chilli and nutmeg.
2) Heat the oil in a saucepan and fry the onions and peppers for 5 minutes until the onions are golden.
3) Stir in 2 tbsp of the spice mix, the garlic, ginger and turmeric and fry for 2 minutes more.
4) Add all of the other ingredients.
5) Bring up to a simmer and cook for 10 minutes or until the fish is cooked.
