What are the health benefits of Aloo gobi?

Aloo gobi is a traditional potato and cauliflower curry that will help look after your bones, blood and immune system. Ours has the addition of broccoli florets for a slightly different take on it. Did you know that aloo means potato and gobi means cauliflower?

 1 medium cauliflower, cut into florets nutritional information

1 medium onion, peeled and finely chopped nutritional information

Method

Simply follow our simply laid out recipe:

1) Heat the oil over a low to medium heat.
2) Add mustard seeds, cumin and coriander and cook for few seconds.
3) Add the onions, garlic and ginger, mix and let cook for few minutes until onion is translucent.
4) Add the tomato and continue cooking until mixture is paste like.
5) Add the chilli powder and turmeric and four tablespoons of water. Mix well.
6) Add the cauliflower, broccoli, potatoes and salt to taste. Mix well to coat with the paste.
7) Turn the heat down to low, cover with a tight lid.
8) Simmer for 30-45 minutes until potatoes are cooked.
9) Check regularly mixing carefully each time and adding more water if necessary.
