The nutrients in this hearty soup help reduce tiredness and fatigue, and support your brain and blood health. Shurpa soup is a popular soup all over Asia. It has as many spellings (depending on the country, all meaning gravy or soup) as varieties. Our version and spelling is from Uzbekistan and contains lamb and vegetables.

1 tin chickpeas drained nutritional information

½ tsp cumin seeds, crushed nutritional information

1 small bunch parsley, finely chopped nutritional information

Method

Simply follow our simply laid out recipe:

1) Wash the lamb place it in a large saucepan. Cover with water and bring to boil over a medium heat.
2) Once the water starts boiling pour it away along with any foam that has risen to the surface.
3) Return the saucepan to the hob and add 2.5 litres of water.
4) Bring it to a simmer and turn the heat down to low or medium.
5) More foam will rise to the surface, remove it with a slotted spoon to keep your broth as clear as possible.
6) Cook the meat for at least 2 hours, covering with a lid after an hour.
7) Once the meat is tender add the remaining ingredients and cook until the potatoes are ready.
8) Remove the meat, take off the bone and share between 4 bowls.
9) Check the seasoning, then dish out the vegetables, and spoon the soup over.
10) Sprinkle over the parsley and serve with some crusty bread.
