2 x 400g cans of butter beans, drained and rinsed nutritional information
2 x 400g cans of butter beans, drained and rinsed
100g/2 large garlic bulbs (whole heads) nutritional information

50ml olive oil nutritional information
50ml olive oil
24g/4 tbsp parsley, chopped nutritional information

Method

Simply follow our simply laid out recipe:

1) Preheat oven to 200°C, Gas 6.
2) Cut garlic bulbs in half horizontally and lay each one, cut side up, on a square of foil. Drizzle with a little olive oil, season and wrap up to form a loose parcel.
3) Put on a baking tray and roast for 45 minutes, until caramelised and tender.
4) Squeeze the soft garlic from the bulbs into a blender with the beans and the rest of the olive oil, then blend to a rough purée. Season well.
5) Warm through very gently in a pan,
6) To serve stir in the parsley and drizzle with more extra virgin olive oil.
