300ml/½ pint double cream, whipped to soft peaks
4g/1 red chilli, chopped
100g/3½oz dark chocolate, chopped
1) Put most of the chocolate into a bowl, reserving a little to top the finished mousse, over a pan of gently simmering water and stir until melted. 2) Remove from the heat, stir in the chilli and allow to cool slightly. 3) Fold the melted chocolate into the whipped cream in a large bowl, using a metal spoon. 4) Spoon into 2 serving dishes. 5) Refrigerate until needed. 5) Serve topped with the reserved chocolate (grated).
