1) Heat oven to 200C/fan 180C/gas 6.
2) Drizzle the oil over the aubergine and bake in the oven for 25 mins until softened.
3) Meanwhile, finely chop the tomatoes and soften in a pan for a few minutes, season with salt and pepper.
4) When the aubergine is ready take out of the oven and top with the tomatoes followed by the mozzarella.
5) Return to oven for another 5 mins or until the cheese has melted.
5) Scatter over some basil leaves and serve on warmed plates.
