Method

Simply follow our simply laid out recipe:

1) Scrub the potatoes to remove dirt and loosen skin, don't peel them. 
2) Cook for 20 minutes in fast boiling water until soft, but not breaking apart. 
3) Drain well. 
4) Peel and roughly chop the onion, and fry in 1 tablespoon of oil for 5 minutes, until just beginning to turn golden. 
5) Add the remaining oil, heat, and add the potatoes. Fry over a medium heat, turning all the time, until they become golden and crisp. Season well.
