What are the health benefits of Grilled red mullet?

A good fish dish that contributes to protecting your cells from damaging free radicals, supports your immune system and contributes to normal thyroid function. Red mullet goes well with Mediterranean flavours, so why not serve with these Roasted Mediterranean vegetables.

Method

Simply follow our simply laid out recipe:

1) Make two diagonal slashes across the thickest part of each fish, on both sides, so that the heat can penetrate. 
2) Slip a quarter of a clove of garlic and a little chopped rosemary into the stomach cavity of each fish. Place in a close-fitting dish. 
3) Mix together the olive oil, lemon juice, chopped garlic, remaining rosemary, salt and pepper. Pour over the fish.
4)  Leave to marinate for at least half an hour and up to 4 hours, turning occasionally. 
5) Preheat the grill. Take the fish out of the marinade; don't bother to brush off any bits of rosemary or garlic as they'll char nicely in the heat. 
6) Grill about 10cm away from the heat. Turn once as they grill, and occasionally squeeze a lemon quarter over them. 
7) Serve with extra lemon wedges.
