What are the health benefits of Veggie curry?

This fab curry is packed with nutrients including much needed fibre! It may look like a lot of ingredients but its super easy to make. If you don't have all these vegetables feel free to mix them up. Remove the butter and add 70ml of cashew milk after step 5 and heat through for a vegan version.

Method

Simply follow our simply laid out recipe:

1) Add the olive oil and butter to a large saucepan over a low heat.
2) Add the onions and garlic and fry for about 5 minutes with the lid on to soften. You could do this while you’re chopping the rest of the ingredients.
3) Remove the lid and blitz the onion mixture with a hand-held blender, to form a paste. If you don’t have a blender don’t worry you can leave the onions as they are, the sauce will just be a little thinner.
4) Add the rest of the ingredients except the stock and peanuts, stir well to coat, cook for a couple of minutes, taking care not to burn.
5) Add the stock to cover, bring to a simmer and cook for approximately 30minutes, until all the ingredients are well cooked. You don’t want them crunchy.
6) Serve in individual bowls and top with the chopped peanuts.
