A very original vegetarian lunch that will deliver pretty much a bit of everything. Chayotes are low in calories and carbohydrates, making this a great savoury dish if you are on a diet.

100g/4 chayote's, peeled and cut in half nutritional information

25g/2 slices monterey cheese nutritional information

200g/2 onions, minced nutritional information

Method

Simply follow our simply laid out recipe:

1) Preheat an oven to 400 degrees F (200 degrees C).
2) Chop the chayote into small pieces.
3) Place into a pot and cover with salted water. Bring to a boil over high heat, then reduce and simmer for 15 minutes or until tender. Drain and set aside.
4) Heat the butter in a frying pan over medium heat. Stir in the onion and cook until softened and translucent.
5) Stir in the chopped chayote, and season with salt and pepper.
6) Break the eggs over the chayote and reduce heat to low. Stir for 3 - 4 minutes until the eggs set.
7) Chop the cheese into pieces. 
8) Tip the mixture into a baking dish and top with the cheese.
9) Bake in the preheated oven until the cheese has melted, about 5 minutes.
