This fantastic egg curry is great for energy creation, muscle control, your immune system, DNA and much more. Although it looks like a lot of ingredients, this curry is really easy to make. Apart from the mustard seeds, you can measure all of the spices out into a bowl, ready to add together.

Method

Simply follow our simply laid out recipe:

1) Put the rapeseed oil and coconut oil in a saucepan over a medium heat.
2) Add the mustard seeds and fry until they start popping.
3) Add the onions and fry for 5 minutes until they are soft stirring regularly.
4) Stir in the garlic and the rest of the spices and fry for a few minutes.
5) Add the tinned tomatoes and salt and pepper to taste.
6) Add enough water to fully cover the onions, bring to a simmer then cover and cook for 20 minutes.
7) Boil the eggs for 8-10 minutes, let the eggs cool and peel them.
8) Slice two of the eggs in half, leaving the other two whole.
9) Once the sauce is cooked use a stick blender to blitz until it's smooth.
10) Add in the cauliflower florets and chunks of potato and simmer until they are tender.
11) 5 minutes before the veg is ready add the eggs to the sauce.
12) Serve with a sprinkling of fresh coriander.
