160g mature cheddar
225ml whole milk
Salt and pepper to taste
225ml soya milk
1 tbsp of gluten free flour
1) Melt the butter in a saucepan over a medium heat. 2) Stir in the flour and cook for 1-2 minutes. 3) Gradually stir in the milks, whisking all the time to ensure a smooth sauce. 4) Simmer gently for 8-10 minutes and season to taste 5) Stir in cheese and allow to melt. 6) Use in any recipe that requires cheese sauce.
